The Antigua & Barbuda Hotels and Tourism Association (ABHTA)<\/strong> is proud to announce the return of its award-winning Unveiling Hospitality Professionals<\/em> series, with Executive Chef Brian Joseph of Hawksbill Resort Antigua<\/strong> as the first professional feature of Season Three<\/strong>. Chef Brian\u2019s story is a truly inspiring journey of passion, perseverance, and purpose.<\/p>

Chef Brian\u2019s love for cooking began at a very young age. As a child, he and his friends would cook at the Seawall by Greenbay<\/strong>, catching fresh seafood and collecting bananas and green figs that washed ashore from the Dominican boat. For young Brian, it wasn\u2019t just a pastime, it was survival. From these humble beginnings, his talent and passion for food grew into a remarkable culinary career spanning over 35 years<\/strong>.<\/p>\n\n\n\n

He began his formal training in 1988 at the Devi Anchorage Hotel<\/strong>, before joining Hawksbill Beach Resort (Kuoni)<\/strong> in 1989. Young and eager, Chef Brian worked across various sections of the kitchen\u2014from \u00c0 la Carte, Buffet, Breakfast, Lunch, to the Grill\u2014gradually working his way up through dedication and skill.<\/p>

His talent earned him the opportunity to train in the United Kingdom, including at the Royal Lancaster Hotel <\/em>in Kensington, London, and under world-renowned chefs, including Rick Stein<\/strong> at The Seafood Restaurant<\/em>, Jamie Oliver<\/strong> at Fifteen Cornwall<\/em>, and Chef Tom<\/strong> at Watergate Bay Hotel and Extreme Academy<\/em>. As one of the only Black chefs and one of the youngest in these kitchens, Chef Brian embraced the experience with great pride.<\/p>

Returning to Antigua, Chef Brian served as Executive Chef at Halcyon Cove Resort<\/strong>, before returning to Hawksbill Resort<\/strong> as Executive Chef, a role he has held with distinction since 2004.<\/p>

Over the years, Chef Brian has received numerous accolades, including Chef of the Year (2006)<\/strong> from the Antigua Hotel and Tourism Association<\/em>, Manager of the Year (2010)<\/strong> at Halcyon Cove Resort<\/em>, and in 2024, he was honored with the Lifetime Achievement Award <\/strong>by the Antigua & Barbuda Hotels and Tourism Association (ABHTA).<\/u><\/u><\/em><\/p>\n\n\n\n

Among his many memorable career highlights, Chef Brian was invited in 2009 to England as a guest chef at the Eden Project Summer Night<\/strong> in Cornwall, where he conducted a live culinary demonstration for an audience of over 300 guests.<\/p>

For young people aspiring to become an Executive Chef, Chef Brian\u2019s journey demonstrates that anyone can achieve success regardless of their background. Coming from humble beginnings in Greenbay, he emphasizes that passion, hard work, and a positive mindset are essential to reaching one\u2019s goals in the culinary industry.<\/p>
